  • 2 tablespoons vegetable oil
  • 1/2 cup (120g) plain yogurt

Instructions

  1. Preheat oven to 375°F (190°C). Line a 24-cup mini muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, whisk together the melted butter, milk, egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined; do not overmix as lumps are okay.
  5. Fold in the mini chocolate chips gently.
  6. Fill each muffin liner about 3/4 full with batter using a spoon or ice cream scoop.
  7. Bake for 12-15 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 2 minutes, then transfer to a wire rack to cool completely or serve warm.

Notes
