  • ⅓ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • Optional add-ins: ½ cup chocolate chips, ½ cup chopped walnuts or pecans, ½ cup shredded zucchini (squeezed dry)

Instructions

  1. Preheat oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners or grease lightly.
  2. In a large bowl, mash the ripe bananas with a fork or potato masher until mostly smooth.
  3. Add the oil, milk, eggs, honey (or maple syrup), and vanilla to the mashed bananas. Whisk until well combined.
  4. Add the oats, cinnamon, and baking powder to the wet mixture. Stir gently until just incorporated; do not overmix.
  5. Fold in any desired add-ins like chocolate chips, nuts, or shredded zucchini.
  6. Divide the batter evenly among the 12 muffin cups, filling them about ¾ full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely before storing.

Notes

Use very ripe, brown-spotted bananas for natural sweetness. Do not overmix the batter to avoid tough muffins. If adding zucchini, squeeze it dry thoroughly to prevent sogginess. These freeze well for up to 3 months; wrap individually for best results.
