Instructions

  1. Preheat oven to 350°F (175°C). Lightly spray a 12-cup mini muffin pan with non-stick cooking spray.
  2. In a medium bowl, crack the eggs and add heavy cream, salt, and pepper. Whisk vigorously until the mixture is uniform and smooth, incorporating air.
  3. Stir in the shredded cheese and chosen mix-ins (ensure veggies are diced small and drained/wilted to remove excess moisture).
  4. Pour the egg mixture into each muffin cup, filling them about 3/4 full to allow for rising.
