Crispy on the outside and juicy on the inside, these Blackstone Grilled Burgers are the easiest way to feed a crowd without stressing out. Perfect for Labor Day BBQs, this method ensures even cooking and maximum flavor using a flat-top griddle.

- 2 pounds (900g) 80/20 ground chuck
- 1.5 teaspoons kosher salt
- 1 teaspoon freshly cracked black pepper
- 1 teaspoon garlic powder (optional)
- 8–10 brioche or potato burger buns
- 8 slices (8 oz / 225g) sharp cheddar cheese
- 2 tablespoons softened butter
- 2 medium onions, thinly sliced
- 1 head iceberg or romaine lettuce, shredded
- 2 large beefsteak tomatoes, sliced
- 1 jar dill pickles (or jalapeño slices)
- Condiments: ketchup, mustard, mayo, or secret sauce
Instructions
- Divide ground beef into 8-10 equal portions (5-6 ounces each). Gently form into patties, making a slight indent in the center with your thumb to prevent puffing.
- Season both sides of the patties generously with kosher salt, black pepper, and garlic powder (if using). Keep patties cool until ready to cook.
- Heat the Blackstone griddle to medium-high heat (around 400°F) for 10-15 minutes. Test readiness by sprinkling water drops; they should dance and evaporate quickly.
- Push sliced onions to one side of the griddle. Sauté for 5-7 minutes until soft and caramelized, then remove to a plate.
- Place patties on the hot griddle. Do not press down. Cook undisturbed for 3-4 minutes until juices pool on top and edges brown.
- Flip the burgers. Immediately place a slice of cheese on each. Cook for another 3-4 minutes until internal temperature reaches 160°F (71°C).
- While burgers finish, brush cut sides of buns with softened butter. Toast butter-side down on the griddle for 1-2 minutes until golden brown.
- Let burgers rest for 2-3 minutes to redistribute juices.
- Assemble burgers: bottom bun, lettuce, tomato, patty with cheese, caramelized onions, pickles, condiments, top bun. Serve immediately.
Notes
Do not press the patties while cooking, as this releases flavorful juices. Ensure the griddle is hot enough before adding meat to prevent sticking. For gluten-free options, use gluten-free buns or lettuce wraps. Turkey can be substituted but requires cooking to 165°F.
