Ingredients

  • 1 cup milk (whole or 2%)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced spinach or bell peppers (optional)
  • 1/2 cup cooked crumbled bacon or sausage (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (165°C). Grease a 12-cup muffin tin with butter or non-stick spray, or place silicone cups on a baking sheet.
  2. In a blender or large bowl, whisk together eggs, milk, salt, and pepper until smooth and frothy.
  3. Stir in cheese, vegetables, and pre-cooked meat mix-ins.
  4. Pour or spray the egg mixture into each muffin cup, filling them about 3/4 full.
  5. Bake for 20-25 minutes until the tops are set and a toothpick inserted comes out clean.
  6. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before storing.

Notes

For a creamier texture, use a water bath by placing the muffin tin in a larger pan with hot water halfway up the sides. Ensure vegetables are squeezed dry to prevent soggy egg bites. Cool completely before refrigerating to prevent condensation.
