Instructions

  1. Prep ingredients: Slice apples, dice onion, mince garlic, and pat chicken thighs dry with paper towels.
  2. Heat olive oil in a 12-inch skillet over medium-high heat. Add chicken thighs in a single layer, season with salt and pepper, and sear for 3-4 minutes per side until golden and cooked through (165°F). Remove chicken to a plate.
  3. Reduce heat to medium. Add diced onion to the skillet and cook for 2-3 minutes until softened. Add garlic and thyme, stirring for 30 seconds until fragrant.
  4. Add apple slices and butter to the skillet. Cook for 2 minutes to start caramelizing. Pour in apple cider and Dijon mustard, scraping up brown bits from the bottom. Simmer for 3-4 minutes until apples are tender.
