Description

A quick, refreshing, and simple summer drink made with fresh watermelon, mint, lime, and ice. It requires no cooking and is ready in minutes.


Ingredients

  • 4 cups cubed ripe watermelon (600g)
  • 1 cup packed fresh mint leaves (30g)
  • 23 tablespoons freshly squeezed lime juice (30-45ml)
  • 12 tablespoons honey or agave (optional, 15-30ml)
  • 2 cups ice (200g)
  • 1 cup sparkling water (optional, for serving)

Instructions

  1. Cut the watermelon in half, remove the flesh from the rind, and cube it into chunks that fit your blender.
  2. Add the watermelon chunks, fresh mint leaves, lime juice, honey (if using), and one cup of ice to a blender.
  3. Blend on high until completely smooth, about 30-60 seconds.
  4. Place a fine-mesh strainer over a large bowl or pitcher and pour the blended mixture into it.
  5. Use a spoon to press down on the pulp to extract all the juice, discarding the fibery bits.
  6. Taste the juice and adjust sweetness with more honey or brightness with more lime if needed.
  7. Refrigerate for at least 30 minutes to chill, or serve immediately if blended with ice.
  8. To serve, pour the juice over ice in tall glasses. For a fizzy version, add sparkling water to the glass first.
  9. Garnish with a sprig of mint and a lime wedge.

Notes

Use the ripest watermelon you can find for the best flavor. If the watermelon is not sweet on its own, the drink will lack flavor. Do not skip the lime juice as it balances the sweetness. For a frozen texture, freeze watermelon chunks ahead of time instead of using ice. The drink keeps in the fridge for up to 3 days.
