Description

A hydrating, naturally sweet, and tart summer refresher made with just coconut water, fresh lime, and mint. This drink is ready in 5 minutes, requires no cooking, and is perfect for hot days.


Ingredients

  • 32 oz (1 liter) coconut water (no added sugar)
  • 2 medium limes (for juice and garnish)
  • 1 cup packed fresh mint leaves (about 3040 leaves)
  • 12 tablespoons honey or agave (optional, to taste)
  • Ice cubes
  • Extra mint sprigs for garnish
  • Lime wheels for garnish

Instructions

  1. Wash mint leaves, remove tough stems, and roughly chop or tear them to release aroma.
  2. Place mint leaves in the bottom of a large pitcher or glass.
  3. Gently muddle the mint with a muddler or the back of a wooden spoon to bruise the leaves and release oils; do not crush into a paste.
  4. Cut limes in half and squeeze juice into the pitcher, straining out seeds. You need about ¼ to ⅓ cup of juice.
  5. Pour in the coconut water.
  6. Taste the mixture and add honey or agave if desired, stirring well to dissolve.
  7. Add ice cubes to the pitcher or individual glasses.
  8. Pour the mixture over the ice and let it sit for 5 minutes to allow the mint flavor to steep.
  9. Garnish with lime wheels and extra mint sprigs. Serve immediately.

Notes

Do not over-muddle the mint as it can make the drink bitter. If making ahead for a party, strain out the mint leaves after an hour to prevent over-extraction. For a stronger flavor, freeze lime juice in ice cube trays instead of regular ice. Ensure coconut water is 100% pure with no added sugars.
