Description
A hydrating, naturally sweet, and tart summer refresher made with just coconut water, fresh lime, and mint. This drink is ready in 5 minutes, requires no cooking, and is perfect for hot days.
Ingredients

- 32 oz (1 liter) coconut water (no added sugar)
- 2 medium limes (for juice and garnish)
- 1 cup packed fresh mint leaves (about 30–40 leaves)
- 1–2 tablespoons honey or agave (optional, to taste)
- Ice cubes
- Extra mint sprigs for garnish
- Lime wheels for garnish
Instructions
- Wash mint leaves, remove tough stems, and roughly chop or tear them to release aroma.
- Place mint leaves in the bottom of a large pitcher or glass.
- Gently muddle the mint with a muddler or the back of a wooden spoon to bruise the leaves and release oils; do not crush into a paste.
- Cut limes in half and squeeze juice into the pitcher, straining out seeds. You need about ¼ to ⅓ cup of juice.
- Pour in the coconut water.
- Taste the mixture and add honey or agave if desired, stirring well to dissolve.
- Add ice cubes to the pitcher or individual glasses.
- Pour the mixture over the ice and let it sit for 5 minutes to allow the mint flavor to steep.
- Garnish with lime wheels and extra mint sprigs. Serve immediately.
Notes
Do not over-muddle the mint as it can make the drink bitter. If making ahead for a party, strain out the mint leaves after an hour to prevent over-extraction. For a stronger flavor, freeze lime juice in ice cube trays instead of regular ice. Ensure coconut water is 100% pure with no added sugars.
