- 1 large yellow onion, diced (200g)
- 4 cloves garlic, minced (12g)
- 1 cup uncooked long-grain white rice (185g)
- 2 cans black beans, drained and rinsed (400g total)
- 6 cups vegetable broth (1.4 liters)
- 2 cans fire-roasted diced tomatoes (14.5 oz each / 820g total)
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 cup fresh cilantro, chopped (10g)
- 2 limes, juiced (60ml)
- 2 tablespoons olive oil
- Salt to taste
Instructions
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.
- Add diced onion and cook for 5 minutes until soft and translucent.
- Add minced garlic and diced bell peppers; cook for 3-4 minutes until peppers begin to soften.
- Add cumin, smoked paprika, and salt; stir constantly for 1 minute to toast the spices.
- Pour in diced tomatoes with their juices and vegetable broth; scrape the bottom of the pot to release browned bits.
- Add rinsed black beans and bring the mixture to a gentle boil.
- Reduce heat to low, uncover, and simmer for 10 minutes to meld flavors.
- Stir in uncooked rice, ensuring it is fully submerged.
- Cover and simmer gently for 18-20 minutes until rice is tender.
- Remove from heat and stir in half of the chopped cilantro.
- Taste and adjust seasoning with salt, cumin, or lime juice as needed.
- Ladle into bowls and top with remaining cilantro, sour cream or Greek yogurt, and a squeeze of fresh lime juice.
Notes
Rinse rice before adding to prevent gloopy texture. Toasting spices in oil enhances flavor. Soup thickens upon storage; add broth when reheating. Can be made in an Instant Pot (4 minutes high pressure) or slow cooker (6-7 hours on low).
