Description
A simple, creamy, and refreshing homemade version of the popular Swig drink. This no-bake summer treat combines coconut cream, sweetened condensed milk, and lemon-lime soda for a tropical dessert in a glass.
Ingredients
- 1 cup (240ml) full-fat coconut cream
- 1/2 cup (120ml) sweetened condensed milk
- 1 cup (240ml) chilled lemon-lime soda (Sprite or 7-Up)
- Ice cubes
- Whipped cream (optional, for garnish)
- Maraschino cherry or lime wedge (optional, for garnish)
Instructions
- Chill the lemon-lime soda in the refrigerator or freezer until very cold.
- In a tall glass or mixing bowl, combine the coconut cream and sweetened condensed milk.
- Stir vigorously until the mixture is completely smooth and uniform.
- Fill a tall glass (highball glass) to the top with ice cubes.
- Slowly pour the chilled lemon-lime soda over the ice, pouring down the side of the glass to minimize fizzing.
- Gently stir the mixture with a long spoon to combine the cream base and soda without losing carbonation.
- Top with whipped cream and garnish with a cherry or lime wedge if desired.
- Serve immediately with a straw.
Notes
Use full-fat coconut cream for the best texture; low-fat versions will make the drink watery. Ensure all ingredients are cold to prevent the soda from going flat. Do not over-stir to preserve carbonation. For a dairy-free version, use dairy-free sweetened condensed milk. The cream base can be stored in the fridge for up to 3 days, but add soda fresh when serving.
