Instructions

  1. Preheat oven to 325°F (160°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the long sides, and lightly grease.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons of sugar until it resembles wet sand. Press firmly into the bottom of the prepared pan.
  3. Bake the crust for 8 minutes until toasty. Remove and let cool while making the filling.
  4. In a large bowl, beat the room-temperature cream cheese until completely smooth. Add the 1 cup of sugar and beat until pale and fluffy.
  5. Add pumpkin puree, vanilla extract, cinnamon, and nutmeg. Mix on low speed until just combined.
  6. Add eggs one at a time, mixing on low speed after each addition until just incorporated. Do not overmix.
  7. Pour batter over the cooled crust and spread evenly. Tap the pan gently to release air bubbles.
  8. Bake for 45-50 minutes. The edges should be set, but the center should have a slight jiggle.
  9. Remove from oven and let cool in the pan on a rack for 1 hour.
  10. Cover and refrigerate for at least 4 hours, preferably overnight, to set.
