  • ¼ cup (60ml) honey

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan with butter or non-stick spray.
  2. In a large bowl, beat the eggs and sugar together until light, fluffy, and pale yellow (about 3-5 minutes).
  3. Add the ricotta cheese, lemon zest, and salt to the egg mixture. Mix gently until combined.
  4. Sift the flour and baking powder over the mixture. Use a spatula to gently fold in the flour until just combined. Do not overmix.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
