- 1 cup apple pie filling
- 2 tablespoons butter, melted
- 3 tablespoons sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract (optional)
- 1/4 cup walnuts or pecans, chopped (optional)
- Water or egg wash (for sealing edges)
Instructions
- Preheat air fryer to 375°F (190°C). Let pastry discs sit at room temperature for 5-10 minutes.
- Mix sugar and cinnamon in a small bowl.
- Place a pastry disc on a clean surface and spoon 2 tablespoons of apple filling into the center, leaving a 1/2-inch border.
- Brush the edges of the dough with water or egg wash.
- Fold the dough over to create a half-moon shape and press edges firmly.
- Crimp the edges with a fork to seal tightly.
- Repeat with remaining dough and filling.
- Brush the tops of the empanadas generously with melted butter.
- Sprinkle the cinnamon sugar mixture evenly over the buttered tops.
- Place empanadas in the air fryer basket in a single layer without overlapping.
- Cook at 375°F (190°C) for 10-12 minutes, turning halfway through with tongs.
- Remove when golden brown and crispy.
- Let cool on a rack for 2-3 minutes before serving.
Notes
Do not overfill the empanadas to prevent bursting. Ensure edges are sealed tightly with a fork. If using fresh fruit, cook down first to remove excess moisture. Can be made gluten-free or vegan with appropriate substitutions.
