Description

A quick and healthy weeknight dinner featuring charred chicken and crisp-tender vegetables tossed in taco seasoning, cooked in an air fryer and served over rice or quinoa.


Ingredients

  • 2 large boneless, skinless chicken breasts (about 1.5 lbs / 680g), cut into 1-inch cubes
  • 2 large bell peppers (any color), sliced into 1/2-inch strips
  • 1 large yellow onion, sliced into 1/2-inch strips
  • 2 tbsp taco seasoning (divided)
  • 2 tbsp avocado oil or olive oil (divided)
  • 1/4 cup fresh cilantro, chopped
  • 1 large lime, juiced
  • 1/4 cup sour cream or Greek yogurt (optional)
  • Rice or quinoa for serving
  • Frozen corn kernels (optional)

Instructions

  1. Pat chicken breasts dry and cut into 1-inch cubes. Place in a bowl, sprinkle with 1 tbsp taco seasoning and 1 tbsp oil, and toss to coat. Let sit while prepping veggies.
  2. Slice bell peppers and onion into 1/2-inch strips. Place in a separate bowl, sprinkle with remaining 1 tbsp taco seasoning and 1 tbsp oil, and toss to coat.
  3. Preheat air fryer to 400°F (200°C). Place chicken cubes in the basket in a single layer. Cook for 8-10 minutes, shaking basket or stirring halfway through, until golden brown and internal temperature reaches 165°F (74°C). Remove and set aside.
  4. Add pepper and onion mixture to the same basket. Cook at 400°F (200°C) for 5-7 minutes, shaking basket every 2 minutes, until edges are charred and onions are soft but crunchy.
  5. Warm rice or quinoa. Assemble bowls by placing grain at the bottom, topping with chicken and veggies, squeezing fresh lime juice over everything, and garnishing with cilantro and sour cream or yogurt.

Notes

Do not overcrowd the air fryer basket to ensure proper crisping. Cut ingredients uniformly for even cooking. Shake the basket halfway through cooking. Store leftovers in separate containers to prevent rice from getting soggy. This recipe does not freeze well.
