  • 4 medium sweet potatoes (approx. 2 lbs / 900g)
  • 2 cups shredded cooked chicken (300g)
  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup full-fat coconut milk
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 stalks green onions, sliced
  • 1/2 cup celery, chopped
  • 1/2 cup carrots, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Wash and dry sweet potatoes, then prick them 4-5 times with a fork.
  2. Bake sweet potatoes directly on the rack or on a baking sheet for 40-45 minutes until soft. Let cool for 10 minutes.
  3. While potatoes bake, whisk together coconut milk, buffalo sauce, minced garlic, and grated ginger in a bowl. Adjust heat to taste.
  4. In a separate bowl, combine shredded chicken, chopped celery, and carrots. Toss with half of the buffalo sauce mixture to create the filling.
  5. Slice baked potatoes lengthwise, leaving the bottom intact. Mash the inside flesh toward the edges to create a ‘boat’.
  6. Spoon the chicken filling generously into each potato. Drizzle with the remaining sauce.
  7. Return stuffed potatoes to the oven for 10 minutes to heat through and meld flavors.
  8. Garnish with sliced green onions and serve immediately.

Notes

Ensure sweet potatoes are fully soft before mashing. If the filling is too wet, squeeze chicken dry. For a crispy top, sprinkle gluten-free panko or crushed tortilla chips before the final bake. Balance heat with a teaspoon of maple syrup if desired.
