  • 2 cups (250g) all-purpose flour
  • 1 tablespoon (15g) baking powder
  • 1 teaspoon (6g) salt
  • 1 tablespoon (12g) granulated sugar
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 3/4 cup (180ml) buttermilk, cold

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar to ensure even distribution.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter, two forks, or your fingers to work the butter into the flour until the mixture resembles pea-sized chunks.
  4. Make a well in the center of the flour mixture and pour in the cold buttermilk. Gently stir with a fork until the dough just comes together; it should look shaggy and messy. Do not overmix.
  5. Turn the dough out onto a lightly floured surface. Gently pat the dough out to about 3/4-inch thickness.
  6. Press a 2.5-inch biscuit cutter straight down into the dough (do not twist) to cut out biscuits. Place them on a baking sheet lined with parchment paper, about 1 inch apart.
  7. Gather scraps, pat them out again, and cut a second batch of biscuits.
  8. Brush the tops with extra buttermilk or egg wash for browning.
  9. Bake for 12-15 minutes, or until golden brown on top and hollow when tapped on the bottom.

Notes

Keep all ingredients cold for flaky layers. Do not twist the biscuit cutter as this seals the edges and prevents rising. If baking powder is old, biscuits will not rise. For dairy-free options, use vegan butter and oat milk with lemon juice. For gluten-free, use a 1-to-1 gluten-free flour blend.
