Description

A delicious, gluten-free, and low-carb lasagna that uses zucchini ribbons instead of pasta noodles. This weeknight-friendly dish is creamy, savory, and ready in about 45 minutes.


Ingredients

  • 2 medium zucchini (approx. 1.5 lbs)
  • 1 lb ground beef (80/20)
  • 2 cups marinara sauce
  • 15 oz full-fat ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1 small onion, minced
  • 1 large egg
  • 1 tbsp dried Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice zucchini lengthwise into 1/8 inch ribbons using a mandoline. Sprinkle with salt and let sit for 10-15 minutes to draw out moisture. Pat dry thoroughly with paper towels.
  3. Heat a large skillet over medium-high heat. Brown the ground beef, breaking it up with a spoon. Drain excess grease.
  4. Add minced garlic and onion to the beef; cook for 1-2 minutes until fragrant.
  5. Stir in marinara sauce and simmer for 5 minutes to thicken. Season with salt and pepper.
  6. In a medium bowl, mix ricotta cheese, egg, half of the mozzarella, and Italian seasoning until smooth.
  7. Spread a thin layer of meat sauce on the bottom of a 9×13 inch baking dish.
  8. Layer zucchini ribbons, half the ricotta mixture, and half the remaining meat sauce. Repeat layers.
  9. Top with remaining mozzarella cheese.
  10. Cover with aluminum foil and bake for 20 minutes.
  11. Remove foil and bake for another 10-15 minutes until cheese is bubbly and golden.
  12. Let rest for 10-15 minutes before slicing to allow layers to set.

Notes

Salting and drying the zucchini is crucial to prevent a soggy lasagna. Use full-fat ricotta for the best texture. Let the lasagna rest before cutting to ensure clean slices. Can be made ahead and refrigerated for up to 24 hours before baking.
