Description

A single-serve, indulgent dessert that combines yellow cake mix, peanut butter, and sweetened condensed milk in a ramekin, topped with chocolate fudge and Reese’s Pieces for a quick, zero-waste treat.


Ingredients

  • 1/4 cup (30g) yellow cake mix
  • 2 tbsp (30ml) vegetable oil
  • 2 tbsp (30ml) water or milk
  • 2 tbsp (32g) creamy peanut butter
  • 2 tbsp (30ml) sweetened condensed milk
  • 12 tbsp (15-30ml) chocolate fudge sauce
  • 1 tbsp (10g) crushed Reese’s Pieces or mini cups

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 12-ounce ramekin with butter or non-stick spray.
  2. In a small mixing bowl, combine cake mix, oil, and water (or milk). Stir vigorously until the batter is smooth and resembles thick pancake batter.
  3. Pour batter into the prepared ramekin. Drop dollops of peanut butter on top and gently swirl with a fork to create a marbled effect.
  4. Place ramekin on a baking sheet and bake for 10-12 minutes, or until the top is set and a toothpick inserted comes out with moist crumbs.
  5. Remove from oven and let cool for 2 minutes. Poke 4-6 holes all over the top of the cake with a fork, pushing down to the bottom.
  6. Pour sweetened condensed milk over the hot cake, allowing it to soak into the holes. Let sit for 1 minute.
  7. Drizzle chocolate fudge sauce over the top in a zigzag pattern and immediately sprinkle with crushed Reese’s Pieces.
  8. Let cool for another 5 minutes before serving.

Notes

Ensure the cake is hot when poking holes and adding condensed milk for best absorption. Do not overbake as small cakes dry out quickly. Can be stored in the fridge for up to 3 days and reheated in the microwave for 20-30 seconds. This recipe does not freeze well.
