Description
A versatile, protein-packed smoked sausage queso dip designed for meal prep. This recipe yields four servings that reheat beautifully and can be used for breakfast burritos, lunch wraps, dinner bowls, and snacks.
Ingredients
- 12 oz smoked sausage (Andouille or kielbasa), sliced into half-moons
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 can (10 oz) Rotel tomatoes with green chiles, drained
- 2 cups sharp cheddar cheese, freshly shredded
- 1 cup Monterey Jack cheese, freshly shredded
- 1 tsp ground cumin
- Salt and black pepper to taste
Instructions
- Slice the smoked sausage into half-moons, dice the onion, and mince the garlic.
- Heat a large skillet over medium-high heat. Add sausage slices in a single layer and sear for 2-3 minutes until browned. Flip and cook another 2-3 minutes. Remove sausage from pan, leaving fat behind.
- Reduce heat to medium. Add diced onion to the skillet and cook for 2-3 minutes until translucent. Add minced garlic and cook for 30 seconds, stirring constantly.
- Add the drained Rotel tomatoes to the skillet. Simmer for 2-3 minutes to release juices. Sprinkle in cumin, salt, and pepper, and stir well.
- Reduce heat to low. Gradually add shredded cheddar and Monterey Jack cheese, stirring constantly until melted and smooth. Avoid dumping all cheese in at once to prevent clumping.
- Stir the cooked sausage back into the cheese mixture. Remove from heat immediately.
- Let the queso cool for 10-15 minutes to room temperature to prevent condensation in storage containers.
- Divide into four portions and store in airtight containers.
Notes
Grate your own cheese to avoid anti-caking agents that prevent smooth melting. Drain the Rotel tomatoes well to ensure a thick consistency. Reheat on low heat with a splash of milk or broth if the dip becomes too thick or greasy. This recipe freezes well for up to 3 months if used in cooked dishes like burritos or casseroles.
