A creamy, refreshing summer fruit salad made with fresh berries, bananas, and canned fruits tossed in a vanilla pudding and whipped topping dressing. It’s a no-cook, crowd-pleasing side or dessert that is easy to make and perfect for picnics.

- 1 small box (3.4 oz) instant vanilla pudding mix
- 1 cup whole milk
- 8 oz whipped topping (such as Cool Whip)
- 1 pint (12 oz) strawberries, hulled and sliced
- 2 medium bananas, sliced
- 1 cup (150g) blueberries
- 1 cup (150g) cherries, pitted
- 1 can (8 oz) pineapple chunks, drained
- 1 can (8 oz) mandarin oranges, drained
- Optional: Kiwi, apples, or grapes
Instructions
- Wash and prep all fresh fruit: hull and slice strawberries, slice bananas, pit cherries. Drain canned pineapple and mandarin oranges thoroughly to remove excess syrup.
- In a large mixing bowl, combine the instant vanilla pudding mix and cold whole milk. Whisk vigorously for about 2 minutes until the mixture thickens into a smooth pudding.
- Gently fold in the whipped topping using a spatula, lifting from the bottom up to maintain airiness. Do not stir in circles.
- Add all prepared fruits to the bowl. Start with heavier fruits like strawberries and cherries, then add lighter ones like pineapple and bananas.
- Gently toss the fruit to coat evenly in the dressing, being careful not to crush the bananas.
- Cover the bowl and refrigerate for at least 30 minutes before serving to allow flavors to meld and the salad to chill.
- Serve chilled. For best results, add bananas just before serving to prevent browning.
Notes
Drain canned fruit thoroughly to prevent a watery salad. Add bananas last or toss with lemon juice to prevent browning. Keep ingredients cold for best texture. This salad keeps in the fridge for up to 3 days but is best eaten fresh.
