  • 1 lb ground turkey (93% or 85% lean)
  • 2 medium sweet potatoes (approx. 1 lb), peeled and diced into ½-inch cubes
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ cup water or broth

Instructions

  1. Peel and dice sweet potatoes into ½-inch cubes. Set aside.
  2. Heat olive oil in a 12-inch non-stick skillet over medium heat.
  3. Add chopped onion and a pinch of salt; sauté for 2-3 minutes until translucent.
  4. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn.
  5. Add ground turkey to the pan, breaking it up into small crumbles with a spoon.
  6. Cook turkey for 5-7 minutes, stirring occasionally, until browned and no longer pink. Drain excess grease if necessary.
  7. Add diced sweet potatoes to the pan and stir to combine with the turkey and onions.
  8. Pour in ½ cup water (or broth) and add paprika, cumin, salt, and pepper. Stir to combine.
  9. Cover the pan with a lid and simmer for 10-12 minutes until potatoes are tender. Avoid lifting the lid frequently.
  10. Remove lid and check potato tenderness with a fork. If needed, add a splash of water and cook for 2 more minutes.
  11. Let excess water evaporate until the dish is moist but not soupy. Taste and adjust salt if needed. Serve immediately.

Notes

Ensure sweet potatoes are cut uniformly for even cooking. Do not crowd the pan to allow for proper browning of the turkey. This dish reheats well and is excellent for meal prep.
