Ingredients

  • 1 lb Italian sausage (mild or hot)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium russet potatoes, peeled and diced into 1/2-inch cubes
  • 4 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 bag (10 oz) frozen kale, thawed and squeezed dry
  • 1 tsp fennel seeds
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. Heat a large Dutch oven or heavy pot over medium-high heat. Add the Italian sausage and break it up with a wooden spoon. Cook for 5-7 minutes until browned and crispy. Remove sausage with a slotted spoon, set aside, and leave the fat in the pot.
  2. Reduce heat to medium. Add the diced onion to the pot and cook for 3 minutes until translucent. Add the minced garlic, fennel seeds, and red pepper flakes. Cook for 1 minute, stirring constantly, until fragrant.
  3. Pour in the chicken broth and scrape up any browned bits from the bottom of the pot. Add the diced potatoes. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 12-15 minutes until potatoes are tender.
  4. Add the thawed, squeezed kale and the browned sausage back into the pot. Stir well and simmer for 2 minutes to heat through.
  5. Stir in the heavy cream and let it warm for another minute. Do not boil after adding cream. Taste and adjust salt and pepper as needed.

Notes

For a thicker soup, mash a few potatoes against the side of the pot. If the soup is too salty, add a diced raw potato and simmer for 10 minutes to absorb excess salt. For extra creaminess, blend half the soup (minus kale) and stir back in. When freezing, omit the cream and add fresh cream upon reheating to prevent separation.
