A gluten-free everything bagel recipe that delivers a dense, chewy texture using just five ingredients and a boil-and-bake method. Perfect for breakfast or sandwiches, these bagels are freezer-friendly and customizable.

- 200g (1 ½ cups) Gluten-Free 1-to-1 Baking Flour
- 20g (¼ cup) Psyllium Husk Powder
- 7g (1 packet) Active Dry Yeast
- 180ml (¾ cup + 2 tbsp) Warm Water
- 15g (1 tbsp) Granulated Sugar
- 5g (1 tsp) Fine Sea Salt
- 15g (1 tbsp) Butter or Oil (melted)
- 1 tbsp Baking Soda (for boiling water)
- Everything Seasoning Mix (1 tbsp poppy seeds, 1 tbsp sesame seeds, 1 tsp dried onion flakes, 1 tsp dried garlic flakes, 1 tsp coarse salt)
Instructions
- Activate the yeast: In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5-10 minutes until foamy.
- Mix the dough: In a stand mixer, combine gluten-free flour blend and psyllium husk powder. Add melted butter, salt, and the yeast mixture. Mix on low until combined, then medium for 3-4 minutes until the dough is sticky and tacky.
- Shape the bagels: Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper. Divide dough into 8 equal portions (approx. 100g each). Roll into balls, poke a 1.5-inch hole in the center, and smooth edges. Place on parchment.
- Boil the bagels: Bring a large pot of water to a gentle boil and add 1 tablespoon of baking soda. Carefully lower 2-3 bagels into the water. Boil for 1 minute on each side. Remove with a slotted spoon and place back on parchment-lined sheets.
- Top and bake: Immediately sprinkle boiled bagels generously with everything seasoning mix. Bake for 15-18 minutes until deep golden brown and hollow-sounding when tapped.
- Cool: Let bagels cool on a wire rack for at least 10 minutes before slicing to allow the structure to set.
Notes
Keep ingredients at room temperature. Do not add extra flour as the dough should be sticky. If your flour blend does not contain xanthan gum, add ½ tsp extra xanthan gum. If bagels brown too quickly, tent with foil after 10 minutes. Let cool completely before slicing to prevent a gummy center.
