A refreshing, homemade iced tea infused with fresh peaches and mint. This simple recipe uses strong black tea, ripe fruit, and a touch of honey for a drink that tastes like summer.


Ingredients

  • 810 black tea bags (or 2 tablespoons loose leaf)
  • 8 cups water (filtered)
  • 2 cups hot water (for brewing concentrate)
  • 3 large ripe fresh peaches (about 600g)
  • 1 large bunch fresh mint leaves (about 1 cup packed)
  • 1 medium lemon (juice and slices)
  • 1/3 cup honey or simple syrup (adjust to taste)
  • Ice cubes

Instructions

  1. Boil 2 cups of water. Remove from heat and add tea bags. Steep for 5-7 minutes to create a strong concentrate. Squeeze bags to release flavor, then discard. Let tea cool to room temperature.
  2. Wash peaches and slice into thin wedges or chunks. Slice lemon into rounds. Wash and pat dry mint leaves.
  3. Place mint leaves in the bottom of a large pitcher. Add a splash of sweetener and lemon juice. Gently muddle or bruise the mint to release oils without shredding the leaves.
  4. Add peach slices to the pitcher. Pour in the cooled tea concentrate. Add remaining sweetener and stir to dissolve (ensure tea is slightly warm if using honey).
  5. Refrigerate the pitcher for at least 1 hour, ideally 4 hours, to allow flavors to meld and infuse.
  6. Fill tall glasses with ice. Pour the tea over the ice. Garnish with fresh peach slices and mint sprigs. Serve immediately.

Notes

For best results, use ripe peaches that smell sweet at the stem. If you want to avoid dilution, freeze tea into ice cubes or freeze peach chunks instead of using regular ice. The mint should be bruised, not shredded, to prevent bitterness. This recipe keeps in the fridge for up to 3 days.
