Description
A crisp, refreshing, and sophisticated summer cocktail made with fresh peaches, Prosecco, and homemade peach syrup. Perfect for entertaining or enjoying on a warm evening.

- 3 large ripe peaches (about 450g)
- 1 bottle (750ml) Brut or Extra Dry Prosecco
- 1/2 cup sugar
- 1/2 cup water
- 1 cup soda water
- 1 tablespoon fresh lemon juice
- 10–12 fresh mint leaves
- Ice cubes
Instructions
- Cut peaches in half, remove pits, and dice into small chunks.
- In a medium saucepan, combine diced peaches, sugar, and water.
- Bring to a boil over medium heat, then reduce heat and simmer for 10 minutes until peaches break down.
- Remove from heat and let cool completely.
- Strain the mixture through a fine-mesh strainer, pressing on solids to extract juice. Discard pulp. Chill syrup.
- For individual servings, muddle mint leaves in the bottom of each glass.
- Add ice to glasses.
- Add 2 tablespoons of chilled peach syrup to each glass.
- Pour in 4 ounces of Prosecco.
- Top with 2 ounces of soda water.
- Stir gently to combine.
- Garnish with a slice of peach and a sprig of mint.
- Serve immediately.
Notes
Chill all ingredients before mixing. Do not stir too hard to preserve bubbles. The peach syrup can be made ahead and stored in the fridge for up to a week. For a non-alcoholic version, swap Prosecco for extra soda water and add a splash of apple juice.
