Description
A refreshing, no-cook summer salad featuring sweet watermelon, salty feta, and fresh mint. This kid-friendly recipe requires zero heat and involves interactive prep steps, making it perfect for family BBQs and hot days.
Ingredients
- 4 cups cubed seedless watermelon
- 1 cup crumbled feta cheese
- 1/2 cup packed fresh mint leaves
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 1 tablespoon fresh lime juice
- 1/4 teaspoon flaky sea salt
- Black pepper (optional, for adults)
Instructions
- Wash the watermelon, slice off the rind and green skin, and cut the flesh into 1-inch uniform cubes.
- Stack mint leaves, roll them up like a cigar, and slice thinly to create mint ribbons.
- Crumble the feta cheese into bite-sized pieces.
- In a small bowl or jar, whisk together the olive oil, honey, lime juice, and flaky sea salt until emulsified.
- Place the watermelon cubes in a large mixing bowl.
- Add the mint ribbons and crumbled feta to the bowl.
- Pour the dressing over the ingredients.
- Gently toss the salad using a spatula, lifting from the bottom and folding over to avoid crushing the watermelon.
- Chill in the refrigerator for 15-20 minutes before serving to allow flavors to meld.
- Serve immediately on a platter or in individual bowls.
Notes
Do not dress the salad too early, as the salt and acid will draw moisture out of the watermelon, making it watery. Ensure the watermelon is chilled before starting for the best texture. If prepping ahead, keep ingredients separate and toss just before serving. For adults, a crack of black pepper adds a nice earthy contrast.
