Description
A refreshing, hydrating, and fast-to-make drink combining fresh lime, cool mint, and chia seeds. It offers a healthy alternative to sugary sodas with a creamy texture and energizing benefits.

- 2 cups cold filtered water
- 1/2 cup fresh lime juice (about 4–5 limes)
- 1 cup packed fresh mint leaves (spearmint preferred)
- 3 tablespoons chia seeds
- 2–3 tablespoons honey or maple syrup
- 1 cup ice
- Pinch of sea salt
- Optional: Agave nectar for additional sweetness
Instructions
- Wash limes thoroughly, roll them on the counter to break internal membranes, cut in half, and squeeze to yield 1/2 cup of juice. Strain out seeds.
- Add cold water, fresh lime juice, honey, sea salt, mint leaves, and ice cubes to a blender.
- Blend on high for 30-45 seconds until the mint is finely chopped and the mixture is frothy.
- Add chia seeds to the blended mixture and pulse 3-4 times to mix without turning them into a paste.
- Pour into a glass or jar and let sit at room temperature for 5-10 minutes to allow chia seeds to absorb liquid and thicken.
- Stir well, taste, and adjust sweetness or tartness as needed.
- Serve immediately, garnished with fresh mint and lime wheel if desired.
Notes
Do not skip the resting time; chia seeds need 5-10 minutes to hydrate and thicken the drink. Use cold ingredients for a better texture. If making ahead, store in the fridge for up to 2 days and stir well before drinking as seeds will settle. Do not freeze as texture may become weird.
