Description
A convenient, plant-based noodle dish that holds up well for meal prep. Rich in protein and flavor, these noodles stay firm and delicious for up to five days in the fridge.
Ingredients
- 8 oz (225g) Soba Noodles (buckwheat)
- 1/2 cup (128g) Smooth Peanut Butter (natural, unsweetened)
- 3 tbsp (45ml) Soy Sauce (low-sodium tamari)
- 1 tbsp (15ml) Rice Vinegar
- 1 tbsp (20g) Maple Syrup
- 1–2 tsp (5-10g) Sriracha
- 1 tsp (5ml) Sesame Oil
- 2–3 tbsp Warm Water (for thinning sauce)
- 1 cup (150g) Edamame (shelled)
- 1 cup (100g) Shredded Carrots
- 1/4 cup (15g) Cilantro (chopped, for garnish)
- 1/4 cup (30g) Roasted Peanuts (crushed, for garnish)
Instructions
- Bring a large pot of salted water to a boil. Add soba noodles and cook according to package directions, aiming for al dente (undercook slightly if package says 5 minutes, cook for 4).
- Drain noodles and rinse under cold water to stop cooking and remove starch. Set aside to cool completely.
- While noodles boil, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, sriracha, and sesame oil in a medium bowl.
- Add 2-3 tablespoons of warm water from the noodle pot to the sauce and whisk until smooth and creamy. Adjust seasoning to taste.
- In a large bowl, toss the cooled noodles with the sauce. Add edamame and shredded carrots. Toss gently until every noodle is coated.
- Divide the noodle mixture evenly into five glass meal prep containers.
- Do not add cilantro or crushed peanuts yet. Seal containers tightly and label with the date.
- Store in the refrigerator for up to 5 days. When ready to eat, garnish with fresh cilantro and crushed peanuts.
Notes
Undercook noodles slightly as they will continue to cook when reheated. Cool noodles completely before storing to prevent bacterial growth. Keep cilantro and peanuts separate until serving to maintain texture and color. Sauce thickens as it cools; add warm water if needed. For a gluten-free version, use 100% buckwheat soba or brown rice noodles and certified gluten-free tamari.
