Description

Ingredients

  • 2 cans (5 oz each) wild-caught albacore tuna packed in water
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1/2 medium English cucumber, diced and seeds removed
  • 1/4 medium red onion, finely diced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/2 cup cherry tomatoes, halved
  • 1 tsp dried oregano
  • 1 tbsp capers, drained
  • 2 tbsp fresh dill or parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Wash and dry the cucumber and tomatoes. Dice the cucumber into small cubes, removing watery seeds. Halve the cherry tomatoes and finely dice the red onion. Place all chopped vegetables in a medium mixing bowl.
  2. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, dried oregano, a pinch of salt, and black pepper until emulsified and creamy.
  3. Drain the tuna cans thoroughly, pressing against the side to remove all water. Flake the tuna with a fork into large chunks.
  4. Add the flaked tuna, olives, and capers to the bowl with the vegetables.
  5. Pour the dressing over the mixture and gently toss using a folding motion to combine without breaking up the tuna.
  6. Taste and adjust seasoning with more salt or lemon if needed. Serve immediately.
