Description

  • 6 to 7 medium fresh peaches, peeled and sliced (about 2 lbs)
  • 1/2 cup granulated sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon cornstarch
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar (for topping)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving an overhang on the sides, and lightly grease.
  2. In a medium bowl, toss sliced peaches with 1/2 cup sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Let sit for 10 minutes to draw out juices.
  3. In a large bowl, whisk together flour, baking powder, salt, and 1/2 cup sugar. Add melted butter and vanilla extract, stirring until the mixture resembles coarse crumbs.
  4. Pour the peach mixture into the prepared baking dish and spread evenly. Sprinkle the crumbly topping over the peaches without pressing down. Drizzle any remaining melted butter over the top.
  5. Bake for 45-50 minutes until the topping is golden brown and the peaches are bubbling. Tent with foil if browning too quickly.
  6. Cool in the pan for at least 30 minutes to allow the bars to set. Lift out using parchment overhang and slice into 12 or 16 squares.

Notes

For easier peeling, score an X on the bottom of peaches, blanch in boiling water for 30 seconds, then plunge into ice water. If using frozen peaches, thaw and drain well, adding an extra tablespoon of cornstarch. Do not freeze these bars as the topping becomes soggy. They keep at room temperature for 2 days or in the fridge for 5 days.
