Description

Ingredients

  • 3 to 4 pounds beef brisket (flat cut preferred)
  • 2 tablespoons neutral oil (avocado or canola)
  • 1/2 cup raw honey
  • 1 cup apple cider
  • 1 cup low-sodium beef broth
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 4 cloves garlic, minced
  • 1 large yellow onion, sliced
  • 3 large apples (Honeycrisp or Fuji), peeled and sliced 1/4-inch thick
  • 1 tablespoon butter (optional)
  • 2 sprigs fresh thyme (or 1 teaspoon dried)
  • Salt and black pepper to taste

Instructions

  1. Prep ingredients: Peel and slice apples, slice onion, mince garlic, and measure liquids.
  2. Pat brisket dry and season generously with salt and pepper.
  3. Heat oil in a large skillet over medium-high heat. Sear brisket for 3-4 minutes per side until browned. Transfer to slow cooker.
  4. In the same skillet, cook sliced onions for 2 minutes to deglaze. Add garlic and cook 30 seconds.
  5. Add honey, apple cider, beef broth, and soy sauce to the skillet. Stir to combine.
  6. Pour sauce over brisket in the slow cooker. Arrange apple slices on top and add thyme sprigs.
  7. Cover and cook on LOW for 6-8 hours until meat is fork-tender.
  8. Remove brisket and rest on a cutting board, covered with foil, for 15 minutes.
  9. Ladle sauce into a saucepan, discard thyme, and simmer. Thicken with cornstarch slurry if desired, then stir in butter.
  10. Slice brisket against the grain and serve with the warm sauce.

Notes

Slicing the brisket against the grain is vital for tenderness. The dish tastes even better the next day. If the sauce is too sweet, balance with a splash of apple cider vinegar. For a gluten-free version, use tamari or coconut aminos instead of soy sauce.
