Description

A comforting, healing ginger tea infused with honey, lemon, and spices, perfect for ringing in the New Year with warmth and tradition.


Ingredients

  • 34 inches fresh ginger root, peeled and sliced
  • 4 cups water
  • 1 large cinnamon stick
  • ½ cup raw honey
  • 2 tablespoons fresh lemon juice
  • 45 whole black peppercorns (optional)
  • 1 star anise pod (optional)
  • 23 apple slices (optional)
  • 1 strip orange peel (optional)

Instructions

  1. Peel the ginger root using the edge of a spoon and slice it into thin coins or half-moons.
  2. Pour water into a small saucepan and add the ginger slices and cinnamon stick.
  3. Bring to a boil over medium-high heat, then reduce heat to low and simmer for 10 minutes to infuse the flavor.
  4. Turn off the heat and stir in the honey until completely dissolved. Do not boil the honey.
  5. Squeeze in the fresh lemon juice and add any optional ingredients like apple slices or orange peel.
  6. Let the pot sit covered for 2 minutes to allow flavors to meld.
  7. Ladle into mugs and serve hot.

Notes

Use raw honey for best flavor and health benefits. Do not boil honey as high heat destroys enzymes. For a stronger tea, grate the ginger, but strain thoroughly. You can make the ginger-cinnamon water base ahead of time and store in the fridge for up to 3 days; add honey and lemon fresh when serving.
