Description

A festive, symbolic, and easy-to-make holiday cocktail featuring pomegranate juice, honey, and sparkling wine. This drink captures the sweet new year tradition in a glass and can be prepared in bulk for parties.


Ingredients

  • 4 cups (960ml) 100% pure pomegranate juice
  • ½ cup (120ml) mild honey (clover or orange blossom)
  • 2 tablespoons (30ml) freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 2 bottles (750ml each) Brut or Extra Dry prosecco or sparkling wine
  • 2 cups (480ml) sparkling water (optional, to stretch)
  • 1 cup fresh pomegranate arils
  • Thin lemon slices or rosemary sprigs for garnish
  • Ice cubes (preferably frozen pomegranate juice)

Instructions

  1. In a small bowl or jar, combine the honey and lemon juice. If the honey is thick, microwave it for 15 seconds to make it runny. Stir vigorously until the honey is fully dissolved.
  2. In a large pitcher, pour in the pomegranate juice. Add the honey-lemon mixture and vanilla extract. Stir well to combine and taste. Adjust with more lemon juice or honey if needed.
  3. Place the pitcher in the fridge to chill for at least 30 minutes, or up to 3 days.
  4. Right before serving, remove the pitcher from the fridge. Add the sparkling wine or champagne. If using sparkling water, add that now too. Stir gently to preserve bubbles.
  5. Add ice cubes to the pitcher. Ladle the cocktail into glasses, ensuring each glass gets some pomegranate arils from the bottom. Garnish with lemon slices or rosemary.

Notes

Do not add sparkling wine too early as it will go flat. The pomegranate-honey base can be made up to 3 days in advance. For a non-alcoholic version, substitute sparkling wine with sparkling water or ginger ale. Freeze pomegranate juice into ice cubes to prevent dilution.
