A cozy winter cocktail that combines bourbon, vanilla ice cream, and homemade salted caramel sauce for a sweet, boozy treat ready in minutes.

- 2 ounces (60ml) Bourbon or smooth Rye whiskey
- 1 large scoop (about ½ cup) high-quality vanilla ice cream
- 2 tablespoons (30ml) salted caramel sauce
- Pinch of flaky sea salt (for garnish)
- Optional: Whipped cream
- Optional: Extra caramel drizzle
Instructions
- Chill a rocks glass or coupe glass in the freezer for 10 minutes.
- If making homemade caramel, melt sugar in a saucepan until amber, then stir in heavy cream and sea salt until smooth. Let cool slightly. If using store-bought, warm slightly in microwave to make pourable.
- Remove the chilled glass from the freezer and drizzle the salted caramel sauce inside, swirling to coat the sides.
- Pour the whiskey into the glass over the caramel and stir gently to combine.
- Gently place a large scoop of vanilla ice cream on top of the whiskey mixture.
- Sprinkle a pinch of flaky sea salt over the top.
- Serve immediately with a straw and a spoon.
Notes
Use room temperature whiskey to help it blend smoothly with the ice cream. High-quality vanilla ice cream is essential for the best texture. If the drink is too sweet, use a drier whiskey like rye or add a splash of cold water.
