Ingredients
- 1 ½ cups grated zucchini (approx. 200g, squeezed dry)
- ½ cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1 ¾ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp cinnamon
- 1 ½ cups dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Grate the zucchini and squeeze out excess moisture using a cheesecloth or clean kitchen towel until it feels damp, not dripping.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until just combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Add the dry ingredients to the wet ingredients and mix on low speed until just combined.
- Gently fold in the squeezed zucchini and chocolate chips.
- Chill the dough for 30 minutes (optional but recommended).
- Scoop dough balls (about 2 tablespoons each) onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 12-14 minutes until edges are golden brown but centers still look slightly soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

It is crucial to squeeze the zucchini thoroughly to remove excess water; otherwise, the cookies will spread too much or become gummy. Do not overmix the dough to avoid tough cookies. For best texture, chill the dough before baking. You can freeze the dough balls for up to 3 months.
