Description
A small-batch, creamy, and tender beef stroganoff designed specifically for one or two people. This slow cooker recipe eliminates waste and provides a rich, comforting dinner with minimal prep time.
Ingredients
- 12 oz beef sirloin or flank steak, sliced into thin strips against the grain
- 2 tbsp all-purpose flour
- 1 tbsp butter
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 cup beef broth (low-sodium)
- 1 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- 8 oz egg noodles
- ½ cup full-fat sour cream
- Fresh parsley or dill for garnish (optional)
Instructions
- Slice the beef into thin strips against the grain and toss with flour until lightly coated.
- Melt butter in a medium skillet over medium heat. Sauté diced onion for 3-4 minutes until translucent, then add garlic and cook for 1 minute. Remove from heat.
- Transfer the beef and sautéed onion/garlic mixture to a slow cooker. Add beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine.
- Cover and cook on LOW for 4 hours or HIGH for 2-3 hours, until beef is fork-tender.
- About 30 minutes before serving, boil egg noodles in a separate pot according to package directions. Drain 1 minute early and do not rinse.
- Turn the slow cooker to OFF and let it cool for 5 minutes. Stir in the sour cream. Adjust consistency with a splash of broth if needed.
- Serve the creamy beef mixture over the cooked egg noodles. Garnish with fresh herbs if desired.
Notes
Never add sour cream while the slow cooker is on high heat, as it will curdle. Always turn the cooker off and let it cool for 5 minutes before stirring in the dairy. Do not cook egg noodles in the slow cooker as they will turn to mush; boil them separately. Slice beef against the grain for maximum tenderness.
