A simple, hands-off slow cooker recipe for homemade apple butter using pantry staples. This recipe requires zero active stirring and results in a deep, mahogany-colored spread perfect for toast, oatmeal, or gifting.
Ingredients
- 6 lbs apples (mix of tart like Granny Smith and sweet like Honeycrisp or Gala), cored and chopped into rough chunks
- 1 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 cup water
Instructions
- Wash apples thoroughly. Do not peel. Core and chop into rough chunks, then toss into the slow cooker.
- Sprinkle sugar, cinnamon, nutmeg, and cloves over the apples. Add lemon juice and water. Stir with a wooden spoon to distribute spices.
- Cover and cook on LOW for 8 hours or HIGH for 6 hours until apples are completely broken down and soupy.
- Use an immersion blender to puree the mixture directly in the pot until smooth. Alternatively, blend in batches using a food processor or blender.
- Turn slow cooker to HIGH and cook with the lid off for 45-60 minutes to thicken, stirring every 15 minutes to prevent sticking.
- The apple butter is done when it darkens to a deep brown and coats the back of a spoon without running off immediately.
- Stir in vanilla extract at the very end. Remove from heat and let cool completely before jarring.
Notes
Do not rush the thickening phase; cooking with the lid off is essential for the correct consistency. Use fresh spices for the best flavor. Avoid Red Delicious apples as they turn mushy and flavorless. The recipe is naturally gluten-free and vegan, but ensure sugar is certified vegan if strict adherence is required.
