Description
A practical, single-serving version of a Philly cheesesteak using mini sweet peppers as the vessel. This recipe eliminates the soggy bread and waste of traditional sandwiches, offering a low-carb, high-flavor meal ready in 30 minutes.
Ingredients
- 12 medium/large mini sweet peppers
- 1 lb (450g) ground beef (80/20 blend)
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 cup provolone cheese, shredded
- 1/2 cup white cheddar cheese, shredded
- 1 tbsp Worcestershire sauce
- 1–2 tsp hot sauce (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Wash mini sweet peppers and slice off the top 1/4 inch. Remove stems and seeds, keeping peppers intact. Place hollowed peppers in a mini muffin tin.
- Heat an 8-inch skillet over medium-high heat. Add ground beef and break into small pieces. Cook for 4-5 minutes until browned. Drain excess grease if necessary, leaving some for flavor.
- Add diced onion to the skillet and cook for 2-3 minutes until soft. Add minced garlic and cook for 30 seconds until fragrant.
- Stir in Worcestershire sauce and hot sauce (if using). Remove from heat.
- Divide the beef mixture evenly among the peppers (about 2-3 tablespoons per pepper), packing it down gently so it is level with the top.
- Sprinkle the remaining provolone and white cheddar cheese evenly over the top of each stuffed pepper.
- Bake for 12-15 minutes, or until cheese is melted and bubbly and peppers are tender-crisp. If peppers are too hard, bake for an additional 5 minutes.
- Remove from oven and let rest for 2 minutes before serving.
Notes
Shred your own cheese to ensure smooth melting; pre-shredded cheese contains anti-caking agents. Use a mini muffin tin to keep peppers upright and prevent tipping. These are best eaten fresh as they do not freeze well. If using lean beef, add a splash of olive oil to keep the filling moist.
