Description

A fast, 20-minute outdoor grill meal featuring ground beef marinated in gochujang, soy sauce, and spices, cooked directly on the grill for a smoky char. Served over rice with fresh garnishes.

  • 1 lb (450g) 80/20 ground beef
  • 2 tbsp (30g) gochujang paste
  • 3 tbsp (45ml) soy sauce
  • 1 tbsp (15ml) sesame oil
  • 2 tbsp (25g) brown sugar
  • 3 cloves garlic, minced
  • 1 tsp (5g) fresh ginger, grated
  • 4 stalks green onions, thinly sliced
  • Sesame seeds for garnish
  • Rice, noodles, or lettuce leaves for serving

Instructions

  1. In a large bowl, combine ground beef, gochujang, soy sauce, sesame oil, brown sugar, minced garlic, and grated ginger. Mix gently until just combined; do not overmix.
  2. Preheat grill to high heat (450°F-500°F / 230°C-260°C). Clean and oil the grates heavily to prevent sticking.
  3. Divide the beef mixture into four equal patties.
  4. Place patties on the hot grill. Close the lid and cook for 4 minutes without moving them to allow a good sear.
  5. Flip the patties and cook for another 4 minutes until browned and charred outside but slightly pink inside.
  6. Remove beef from grill and let rest for 2 minutes.
  7. Crumble the beef into serving bowls.
  8. Top with sliced green onions, sesame seeds, and a drizzle of extra sesame oil if desired.
  9. Serve immediately with steamed rice or your preferred base.

Notes

Keep beef cold until grilling to prevent sticking. Do not press the meat while cooking to retain juices. Ensure internal temperature reaches 160°F (71°C). Gochujang heat levels vary by brand, so adjust to taste. Leftovers do not freeze well.
