Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
- In a large bowl, mash the overripe bananas until smooth.
- Add the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract to the bananas. Whisk until well combined and smooth.
- In a separate medium bowl, whisk together the 1 ½ cups flour, baking soda, and salt.
- Pour the dry ingredients into the wet ingredients. Gently fold together with a spatula until just combined; do not overmix. The batter should be thick and sticky.
- In a small bowl, combine the cold cubed butter, ¼ cup flour, ¼ cup brown sugar, 2 tablespoons granulated sugar, and cinnamon. Use a pastry cutter or forks to mix until the mixture resembles coarse crumbs.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the streusel mixture evenly over the batter.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil for the last 10 minutes.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use super ripe bananas with black peels for maximum sweetness and moisture. Do not overmix the batter to ensure a tender, cake-like texture. Keep butter cold when making the streusel for a flaky topping. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
