  • ½ cup (100g) granulated sugar
  • ½ cup (120ml) milk (whole or buttermilk)

  • 1 large egg
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup (50g) granulated sugar (for swirl)
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Feed your sourdough starter 4-6 hours before baking so it is active, bubbly, and has doubled in size.
  2. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking pan, optionally lining it with parchment paper.
  3. In a medium bowl, whisk together the active sourdough starter, melted butter, milk, egg, and vanilla extract until smooth.
  4. In a large bowl, whisk together the flour, ½ cup sugar, baking soda, baking powder, and salt.
  5. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Do not overmix.
  6. Pour the batter into the prepared pan and spread it evenly.
  7. In a small bowl, mix the ¼ cup sugar and 1 tablespoon cinnamon. Sprinkle evenly over the batter.
  8. Drag a knife or chopstick through the batter in a zigzag pattern to create a swirl.
  9. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Ensure the sourdough starter is active and at its peak for the best rise. Do not overmix the batter to avoid tough bread. The bread tastes better the next day as flavors meld. It can be stored in an airtight container at room temperature for 2 days or in the fridge for up to 5 days. It also freezes well for up to 3 months.
