Description
A refreshing and elegant summer cocktail combining chilled prosecco, muddled ripe peaches, fresh mint, and lime juice. It is light, visually stunning, and takes only 10 minutes to prepare.
Ingredients
- 2 medium ripe peaches (sliced, approx. 300g)
- 10–12 fresh mint leaves (plus extra sprigs for garnish)
- 1 tablespoon fresh lime juice
- 1 tablespoon simple syrup (optional, adjust to taste)
- 1 bottle (750ml) chilled Prosecco
- Ice cubes
Instructions
- Wash peaches and mint leaves. Slice peaches into thin wedges or small chunks.
- In the bottom of each glass, gently muddle the peach slices and mint leaves to release juices and scent. Do not shred the mint.
- Squeeze the lime wedge into the glass and add simple syrup if using. Stir gently to combine.
- Taste the mixture at the bottom of the glass and adjust sweetness or tartness as needed.
- Fill each glass with ice cubes, filling about two-thirds full.
- Open the chilled prosecco and pour it slowly over the ice and fruit mixture to preserve bubbles. Fill to about an inch from the top.
- Gently slap a fresh mint sprig between your hands to release aromas and place it in the glass. Garnish with a peach slice.
- Serve immediately.
Notes
Chill glasses in the freezer for 15 minutes before serving for best results. Do not muddle mint too aggressively to avoid bitterness. If making for a crowd, prepare the peach-mint-lime-syrup mixture in a pitcher ahead of time and refrigerate. Add the prosecco just before serving to maintain carbonation. For a non-alcoholic version, substitute prosecco with sparkling water or ginger ale.
