- 8 oz boneless, skinless chicken breast (or 8 oz shredded rotisserie chicken)
- 3 tbsp Frank’s RedHot sauce
- 2 tbsp unsalted butter
- 1/2 tsp garlic powder
- 4 small slider buns (Hawaiian sweet or kaiser rolls)
- 1/2 cup shredded sharp cheddar cheese
- 2 tbsp ranch dressing (for serving)
Instructions
- If using raw chicken, place in a saucepan, cover with water or broth, and simmer for 12-15 minutes until internal temperature reaches 165°F. Let rest for 5 minutes, then shred with two forks. If using rotisserie chicken, simply shred 8 oz of meat.
- In a microwave-safe mug or small bowl, combine melted butter, Frank’s RedHot sauce, and garlic powder. Whisk vigorously until emulsified.
- Add shredded chicken to a skillet over low heat. Pour the sauce over the chicken and toss gently until every shred is coated. Cook for 2 minutes to heat through and let flavors marry.
- Preheat oven or toaster oven to 400°F (200°C). Split slider buns in half and place bottom halves on a baking sheet.
- Spoon the buffalo chicken mixture evenly onto the buns. Sprinkle shredded cheddar cheese over the top.
- Bake for 3-5 minutes until cheese is bubbly and slightly browned. Remove from oven and immediately drizzle with ranch dressing. Top with bun halves and serve immediately.
