Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine the softened butter, granulated sugar, and flour. Mix with a fork or hands until the mixture resembles coarse sand.
  3. Press the crust mixture firmly and evenly into the bottom of the prepared pan, aiming for about 1/4 inch thickness.
  4. Pre-bake the crust for 10 minutes until the edges are lightly golden. Remove from oven.
  5. While the crust bakes, toast the shredded coconut in a dry skillet or on a baking sheet over medium heat for 3-5 minutes, stirring frequently, until fragrant and lightly browned. Watch closely to prevent burning.
  6. In a separate bowl, whisk together the sweetened condensed milk and vanilla extract until smooth.
