- 2 medium ripe avocados (about 1 cup flesh / 200g)
- ½ cup Dutch-processed cocoa powder (45g)
- 3–4 tablespoons pure maple syrup (45-60ml)
- 1 teaspoon pure vanilla extract (5ml)
- ½ teaspoon salt (3g)
- 1 teaspoon espresso powder (optional, 2g)
Instructions
- Cut the avocados in half, remove the pit, and scoop the flesh into a blender or food processor, discarding skins and any brown spots.
- Pulse the avocado flesh a few times to break it down into chunks.
- Add the cocoa powder, maple syrup, vanilla extract, salt, and espresso powder (if using) to the blender.
- Blend on high speed for 1-2 minutes, stopping to scrape down the sides with a spatula, until the mixture is completely smooth, glossy, and uniform with no green specks.
- Taste the mixture and adjust sweetness or saltiness if needed by adding more maple syrup or salt.
- Transfer the mousse into serving dishes, cover, and refrigerate for at least 30 minutes to firm up and enhance the flavor before serving.
Notes
Ensure avocados are ripe but not mushy for the best texture. Chilling the mousse is recommended to firm it up and deepen the chocolate flavor. For a thicker, ice-cream-like consistency, freeze for 1-2 hours. If using a less powerful blender, strain the mixture through a fine-mesh sieve for extra smoothness.
