Description
A bright, refreshing, and hydrating summer drink made with fresh watermelon, mint, and lime juice. This simple, kid-approved beverage is ready in minutes and can be served as a mocktail or spiked with alcohol.
Ingredients
- 4 cups fresh watermelon, cubed (approx. 600g)
- 1 cup fresh mint leaves, loosely packed (approx. 30g)
- 2 tablespoons fresh lime juice (approx. 30ml)
- 1 cup cold water
- 1–2 tablespoons honey or agave nectar (optional, to taste)
- 1–2 cups ice
Instructions
- Prep the watermelon by removing the rind and cutting the flesh into 1-inch cubes, ensuring all seeds are removed.
- Place the mint leaves in the bottom of a blender. Gently muddle them to release essential oils, or let the blender handle this in the next step.
- Add the watermelon cubes, lime juice, honey (if using), and cold water to the blender.
- Blend on low speed to break up the fruit, then increase to high and blend for 30-60 seconds until the mixture is completely smooth and bright pink.
- Add 1-2 cups of ice to the blender and blend on high for another 30-60 seconds until the drink is slushy and cold.
- Taste the drink and adjust sweetness or tartness by adding more honey or lime juice if necessary.
- Pour into glasses filled with fresh ice and garnish with a mint sprig and lime wedge. Serve immediately.
Notes
For a thicker, slushier texture without dilution, freeze half the watermelon cubes the night before. Use fresh lime juice for the best flavor, as bottled juice can taste chemical. If the drink is too thick, add more water; if too watery, add more ice or frozen watermelon. The drink is best served immediately but can be stored in the refrigerator for up to 24 hours.
