Mini Cheesecakes: 3-Ingredient No-Bake Dessert

  • Author: Emily
  • Total Time: 4 hours 15 minutes
  • Yield: 12 servings 1x

Description

Light, airy, and perfectly portioned no-bake mini cheesecakes made with simple ingredients like cream cheese, powdered sugar, and cookie crumbs. These require zero oven time and are perfect for hot summer days.

Ingredients

Scale
  • 8 ounces (225g) full-fat cream cheese, softened
  • ½ cup (60g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) heavy whipping cream, cold
  • 1 ½ cups (150g) cookie crumbs (graham crackers, Oreos, or vanilla wafers)
  • 4 tablespoons (57g) unsalted butter, melted
  • Optional toppings: fresh berries, chocolate chips, crushed nuts, or caramel drizzle

Instructions

  1. Crush cookies into fine crumbs. In a medium bowl, mix crumbs with melted butter until it resembles wet sand.
  2. Line a 12-cup muffin tin with parchment paper liners. Press about 1 tablespoon of the crust mixture firmly into the bottom of each cup.
  3. In a large bowl, beat softened cream cheese, powdered sugar, and vanilla extract on medium-high speed until smooth and creamy (about 2 minutes).
  4. In a separate cold bowl, whip heavy cream on high speed until stiff peaks form. Be careful not to overwhip.
  5. Gently fold the whipped cream into the cream cheese mixture using a spatula until combined and no streaks remain.
  6. Divide the filling evenly among the crust-lined cups. Smooth the tops.
  7. Refrigerate for at least 4 hours, preferably overnight, to allow the cheesecakes to set.
  8. Top with fresh berries or other desired toppings before serving.

Notes

Ensure cream cheese is at room temperature to avoid lumps. Heavy cream and the bowl must be cold for proper whipping. Do not overmix when folding in the cream to maintain airiness. For best texture, chill overnight. Can be stored in the fridge for up to 5 days or frozen for up to 1 month.
